Homemade Pumpkin Pie FIlling

As I keep telling everyone, you can make your own pureed pumpkin for pumpkin pie, and it is so much cheaper and plentiful than the canned pumpkin in the grocery stores. Here is a delicious recipe we use to make our own pumpkin pie.

Recipe for Pumpkin Pie Filling

2 large eggs, lightly beaten
1/2 cup molasses
1-1/2 cups pumpkin mash
1/2 cup brown sugar, packed
1-1/2 tsp cinnamon
1 tsp pumpkin spice
1/2 tsp salt
1 can (12 fl. oz.) evaporated milk
1 tsp vanilla extract

Mix all ingredients in large bowl. Pour into unbaked pie crust. Bake at 425 degrees F for 10 minutes. Reduce temperature to 350 degrees F and bake for another 50 minutes. Remove pie from oven and let cool.
